The grape harvest of 2007 grew during a very particular climate that gave an exceptionally early germination because of a mild winter, which also reduced the resting period for the vines. The flowering began around May 5-10, early by about 20 days in respect to 2006, followed by a brisk and rainy growing period for the grapes. This brought about a slowing phenological cycle that counterbalanced, in part, the previous months' anticipation. July saw few rainy days and rising temperatures, although mugginess was avoided because of constant ventilation and low humidity.

BAROLO PREVE - Barolo DOCG
Every vine was harvested at the right point of maturity, and the grapes were pressed and left to macerate separately for 8 to 12 days without the addition of yeast or heating the tanks. The temperature of fermentation was left to follow its natural path, without intervention from the winemaker. After fermentation, the new wine was transferred to wood for malolactic fermentation and aging. It underwent weekly stirring until the spring when, after a blind blending, the wines of Serralunga and Monforte were blended to give the final product, respectively, “minerality and potential to age,” and “depth.”
